Thursday - Lentil Tacos (I'll probably cook it in the rice cooker too...)
Friday - Pizza (We are finally enjoying pizza after 2 years of being gluten free! I grew up eating pizza every Friday night, and since we have all the ingredients on hand, all the time, we're making it a tradition at our house now).
Saturday - Leftovers or Grill (depending on the weather)
As you can tell, I'm a little bit slow this week... We survived our Spring Break, but I just haven't gotten caught up the way I had hoped to...
My menu plan changed a bunch for this week -- so now that the week is half over, I think I've finally committed to what we're eating the rest of this week.
Monday - Green Bean Casserole (1 can (or homemade) cream of mushroom soup, 1 lb cooked ground beef, 1 can green beans (we prefer french cut) - all mixed together in a casserole dish, topped with mashed potatoes and cheddar cheese -- cooked at 350 for 20-30 minutes)
