Oreo Cookies - Homemade, of course!

I'm way behind on blogging, so do forgive me....

For Valentine's Day, I made Oreo cookies... DH was sure that it couldn't be done. I was skeptical, but determined to disprove him. I did.

I used Kate's Oreo recipe from here

They were SOOOOO good! Crunchy, Crispy. Better than store bought - and I didn't have to go to the store to get them!!!!!

I'm not a great food photographer -- mostly because my kids wanted the cookies, so it was a quick picture...

I do realize that we're eating a lot of chicken this week... It's going to be a busy week -- with a bulk pickup of 3400lbs of food on Friday, and then repackaging of it on Saturday.... just a bit busy.

Plus, a few weeks back, I was able to buy 40lbs of chicken breasts for $30 from Sams Club. Man, I love that place some days! Some day I'll find some time to thaw it out and pressure can it. (Yep, that's how chicken is part of my food storage!)

Menu Plan Week of April 13, 2009



As you can tell, I'm a little bit slow this week... We survived our Spring Break, but I just haven't gotten caught up the way I had hoped to...

My menu plan changed a bunch for this week -- so now that the week is half over, I think I've finally committed to what we're eating the rest of this week.

Monday - Green Bean Casserole (1 can (or homemade) cream of mushroom soup, 1 lb cooked ground beef, 1 can green beans (we prefer french cut) - all mixed together in a casserole dish, topped with mashed potatoes and cheddar cheese -- cooked at 350 for 20-30 minutes)

Tuesday - Black Bean and Spinach Lasagna

Wednesday - Chicken Noodle Soup

Thursday - Broccoli Cheesy Rice (I made something similar for the missionaries a few months ago, but I can't find the recipe... so we keep trying to find something similar...)

Friday - Pizza

Saturday - Hawaiian Haystacks - scroll to bottom - we're feeding the missionaries - yum!

Sunday - Crockpot Roast

Wednesday: Pineapple Salsa Chicken (Serving with Minute Rice made in the microwave)

Friday: Pizza from Kinnickinnick's crust -- at my sister's house!

Saturday: Driving home - haven't planned this one yet... it might be Wendy's (Chili and Baked Potato), or I might have some inspiration before then...

Wednesday - Sunday: I'm heading out and leaving DH alone to feed himself. He'll probably eat through our supply of tortilla chips... He loves nachos (Campbell's Fiesta Nacho Cheese)!


Things we're taking with us: Corndog Muffins, Broccoli Apple Salad, Chicken Nuggets (similar to these -- only with regular potato chips and ground chicken), and probably a few more things. I'll try to remember to post them.

Menu Plan Week of February 23, 2009



After thinking about posting my meal plan for several weeks, I'm finally doing it. We primarily eat from our food storage due to our food allergies and our lifestyle. Since I know that using food storage can be daunting, I thought this might help.


Here is our plan for the week:

Monday: Crockpot Southwestern White Chili and Cornbread (I use Crockpot 365's cornbread recipe, adding 2T of oil, and baking in the oven at 350F for about 25 minutes).

Tuesday: Crockpot Taco Soup

Wednesday: Spaghetti Pie (The exact recipe is an old one I grew up with my mom making, but this one looks close enough- plus, I don't have to type it up!)

Thursday: Crockpot Beans and Rice

Friday: E's Birthday - We're planning to try to attend Oxford's Chili/Pie Cook-off. We'll probably bring one of my new favorite chili recipes.

Saturday: West Chester ward party - gluten free mac and cheese for the kiddos

Sunday: Crockpot Chicken

As if you couldn't tell, I'm also deeply in love with my crockpots (I have more crockpot's than kiddos...)
